Seven years ago today, we brought this little one home. She is a rescue out of Texas. She was dropped in a high kill shelter with the description "unwanted". How could anyone abandon such a sweet and gentle soul.

An old car hood turned upside down, tied with 20' of rope to the hitch of a 4WD truck. A foot of snow on the roads. 6 of us piled on going down a winding country road at 45mph. We all ended up in a farmers field after a turn. luckily no injuries. When we were not all that smart and bodily...

This is Varly, he was named after a Washington Capitals goalie that we saw play the day before we rescued him. He was taken out of an abusive household and we had the privilege of adopting him. Jack Russell/ shitzu mix. The Shitzu calmed him down but he has all the Jack Russell attitude.

    Diving in head first

I went all in for all grain brewing from day one. Two months of reading everything I could, a lot from this forum, before I bought my first piece of equipment. Most will tell you to start with extract and move up from there, but if you are willing to do your homework, you can go all grain to...

    Portland Maine

If you want to travel a little north, Maine Brewing Co. is just south of Freeport. L.L. Bean is just a little further up the road in freeport. The Porthole is a nice outdoor dining option. We go there because they are dog friendly on the deck, and we never travel without our fur kids. We...

    Smoke Tube

For pork I prefer apple. Beef you can use almost anything, hickory is a good choice. I use Pit Boss competition blend for chicken and beef as well most of the time.

    Smoke Tube

My experience with cheese is it needs to rest for a couple of weeks in the refrigerator wrapped in butchers paper after smoking. also Mesquite is probably too strong for cheese. I do mine with apple pellets.

What do you use RO water for, besides brewing?

I use RO for almost everything. Brewing, starters with DME, fish and turtle aquariums, with minerals added back for their health and I use it in my CPAP. For drinking water and coffee I don't care for straight RO so I add Himalayan Pink salt and Baking Soda to the water to add back some of the...

I get mine at Lowe's. Should be available anywhere that sells grills and smokers.

    Smoked Ribs

For the Two hour wrap use Pink Paper (butcher paper). Foil can hold too much moisture making the ribs soggy. The pink paper lets enough moisture escape that the bark stays firm while holding enough moisture to keep the ribs from drying out too much. I use a mix of BBQ sauce and beer in the...

Easiest All-Grain Recipe for a Newbie

A SMaSH (single malt, single hop) is a good place to start. Look up a SMaSH and you will find plenty of recipes to choose from.

    Dogs

Today is an incredibly sad day. My brew buddy and best friend left us suddenly. A very rapid decline due to renal failure. Our hearts are broken. He is now with his best friend, our Collie, Lindsey that we lost 3 years ago. They were best friends and inseparable. This Christmas will not be the...

    Pluto Gun Beer Leaked

I went to the Pluto gun because the picnic taps were always breaking. Love them! Used with EVA tubing 4mm ID at 5ft length and I get a perfect pour. Will never go back to the standard picnic tap. I did have a leak when pushing StarSan at higher pressure, around 30psi, when sanitizing...

    Homebrewtalk.com "personalities"

I use a pellet smoker with Pit Boss Competition Blend but I would probably use Oak , Pecan or Hickory if using chips or chunks. I would think almost anything except Mesquite, that may be too strong. I first had smoked corn at a BBQ joint near here and I think they used Hickory for everything...
