Opinions on my ward water report

I wanted to share my water report from Ward lab to see if I could get some opinions and insights from some of the knowledgeable people in this community. I have a very limited understanding of water chemistry, but these numbers seem to indicate that I have pretty soft water that would be a good...

What is temporarily muting hop aroma/flavor?

On my last couple of highly hopped beers I have had the experience of losing hop aroma/ flavor when they are first kegged. I immediately think that I have had some sort of oxygen ingress somewhere in my process and attribute the lack of aroma/flavor to that and I assume that the batch is ruined...

What makes a good American light lager?

I am wondering if you would elaborate a little more on this. I am curious about this yeast, but I can't seem to find much discussion about it.

    Omega Lutra yeast?

Update on kettle sour with Lutra: Two days after pitching (temps held consistently in the high 70's), the krausen had completely fallen and the fermentation activity seemed to have ended. I took a gravity reading and it was NOT even close to final gravity (1.028). I left it for three more days...

    Dry hopping with kveik

This is good advice! Thank you! I have dry hopped in the low 60's, but I would add my hops directly from the freezer to the fermenter without letting them get to room temperature first. And, I have noticed that they sink to the bottom pretty quickly. I suppose this is why. Wow! I can't believe...

    Dry hopping with kveik

I ferment in the low 80's typically. Maybe I will try it a little warmer. It seems, though, that warmer would create even more of the esters that I feel cover up, or at least compete with, hop flavors. I do like the orange esters from Voss, but I would like for them to be just a part of the...

    Dry hopping with kveik

I find this thread quite interesting. I have not found many other places where people are talking about how Kveik yeasts sometimes mute hop flavor and aroma. This has also been my experience, but not in every case and not with every hop variety. I have been playing around with Kveik yeasts for...

    Omega Lutra yeast?

I think that it is safe to say that lutra kveik is still very robust in a very acidic brew (ph 3.4). The krausen looked like this less than 12 hours after pitching. I may need to put on a blow off tube. The temp of the beer seems to be holding around 78-79f. The ambient temperature is 73f.

    Omega Lutra yeast?

I went ahead and made a kettle sour (GOSE) and pitched lutra kveik in it this weekend. Yesterday I made wort: 11 gallon batch- 7 pounds pilsner 9 pounds wheat mashed at 150f Cooled to 100f and added Swanson L. Plantarum (about 15 capsules)to the kettle, put the lid on and let it sit for 24...

    Omega Lutra yeast?

I am also curious about using lutra in a kettle sour. I'm following this in case someone comes along to share their experience using it this way.

New England IPA "Northeast" style IPA

I should point out that the recent bad experience that I described was not from 2020 Galaxy hops. It was a pound of YVH 2019 Galaxy (AA 12.9%) . However, the hops were stored in the freezer in the unopened vacuum sealed bag that they came in until I used them.

New England IPA "Northeast" style IPA

I'll also add that I have had a recent bad experience with Galaxy hops. I made an NEIPA with a typical combination of Galaxy/ Citra/ Mosaic and the resulting beer tasted so bad that I thought that it had a wild yeast contamination- it was incredibly astringent and tasted like a rubber band to...

My galaxy 2019 hops are terribe!

Yes! I agree that rubber or plastic sounds like wild yeast contamination and that is what I thought I was dealing with. But these hops put that flavor in a different keg of American Pale Ale in one day when I dry hopped with them. That flavor was not there before I dry hopped with these Galaxy...

My galaxy 2019 hops are terribe!

It's was carbonating in the keg for about two weeks before I tasted it. It's been in the keg three weeks now and the character is still there.

My galaxy 2019 hops are terribe!

I had to go and get them out of the freezer just now. In the aroma of the actual hops, I do think that I pick up onion or garlic. it's not overpowering, but I do think that I detect it. I also poured a glass just now and had my wife smell and taste it. She agreed that the beer tasted and...

My galaxy 2019 hops are terribe!

I know that the quality of hops can vary widely based on sources, storage conditions, etc., but I am just curious how many others are having bad experiences with Galaxy hops. I recently made an NEIPA with a citra-mosaic-galaxy hop combination and the beer tasted HORRIBLE! I suspected that the...

    Sanitizer question

I seem to have a wild yeast that has taken up residence in my brew space that IODOPHOR works on, but star San does not. About a year ago, I had an issue with something giving my beers a really harsh astringency and a slight phenolic flavor that muted all of the hop flavor and aroma. I do...

    Using too much yeast cake?

I am not totally sure what all of the over pitch flavors would be. And, although I do use the Mr. malty calculator when I make starters, I have not really used it for yeast cake re-pitches.
