    Infected

I syphoned it off....tastes decent, other than being really young. I drank a couple of glasses and haven't died yet, so I think it might be ok. I didn't bother carbing it, given the uncertainty of its condition, but I did spice some of it and add honey and brown sugar...quite tasy actually...

    Infected

My cider is infected....it was fine through fermentation but I left it for a couple extra weeks in the carboy and just yesterday I noticed it's growing a nice layer of crusty white film on top. This has just appeared within the last 3 days. My question is, can it be salvaged if I syphon off and...

    Taking the Next (baby) Step

If you want to upgrade, keep an eye on craigslist.com for brewing equipment. I got a full setup for $25. Ale Pail, Bottling Bucket, siphon hose, racking cane, capper, etc.

    Let's talk Ginger Beer!

Thanks! I'm still at the extract stage (for now). I'm thinking of just brewing a basic Hefe from LME and gingering the #&$% out of it...

    Let's talk Ginger Beer!

I know this is an old thread but I found it while looking for a Ginger Beer recipe. I too fell in love with the ginger beer at PF Changs. I too figured it was a ginger-wheat beer based on the cloudiness and cereal flavor. I was really disappointed to find out it's nothing more than Kirin Lager...

    More noob questions

I have a couple batches of beer that will need to be bottled and I'm running short....that's why I was hoping that growlers would hold a light carbonation without going 'splodey.

    More noob questions

I'd like to try my hand at a cider, seeing as it is the season...here is what I'm thinking. Take 5 gallons of cider and add 1 lb of lactose for sweetness....ferment. I want just a light carbonation, so I'm wondering if I add just 1/3 cup of corn sugar for priming, would it be safe to carb in...

First batch racked to secondary...weak flavor?

First batch racked to secondary...weak flavor?

I figured with only about 3lbs of LME, 10 days would have been plenty of time....guess I need to rely more on the almighty hydrometer

First batch racked to secondary...weak flavor?

It was a kit. Once I got it into secondary, the airlock started bubbling again, so it clearly wasn't done working. Ingredients are as follows: 1.5 lbs. Flaked Oats 0.5 lbs. Simpson's Roasted Barley 3.15 lbs. Dark Malt Syrup 1 lbs. Lactose 1 oz. Willamette (60 min) Danstar...

First batch racked to secondary...weak flavor?

I just transferred my first batch (Breakfast Stout) to the secondary. It was in primary about 10 days. It smelled nice and fermenty, color was good and no wierd floaties. Gravity read about 1030...honestly, I probably don't care as much about gravity as I should...but I don't. Anyway... Of...

Super sweet first sample (at OG)...normal? I'm sure my beer is fine... :)

Yes, sweet is normal and indeed good! When I worked at Frankenmuth Brewery, I would always hit the brewmaster up for a glass of wort every time he brewed. He'd dip it straight out of the whirlpool for me. I love that sweet-bitter liquor!!

Cleaning Burnt Wort in Aluminum Pot

I burnt the bejeezus out of my LME and now have a nice black layer of carbon tightly adhered to the bottom of my aluminum brewpot. What's the easiest way to clean it?

    Fermentation (seemingly) stopped

You are correct....it's terminal noobitis. It's a low gravity beer anyway, so I should expect the yeasties to eat their dinner quickly. Hey, we're just down in Mt Clemens, maybe our paths will cross at a brewpub sometime...

    Fermentation (seemingly) stopped

Thanks....it's my first batch, so I'm not sure exactly what to expect. I'll leave it be and transfer to secondary in a week or so.

    Fermentation (seemingly) stopped

After pitching the yeast, my airlock was bubbling furiously within an hour. This lasted about a day...now, nothing. I realize there may still be some action going on in there, but it just seems very soon for things to slow down this much. Opinions? FYI, this is a Breakfast Stout, that used...

    Wort sat overnight. Problems?

Thanks everyone for the words of encouragement. Yeast is pitched and the airlock was bubbling away within an hour. All we can do now is let it run its course and see how it ends up. I'll report back on this one in about 6 weeks! Thanks! Rowe~

    Wort sat overnight. Problems?

Hi All, Had an issue cooling my wort on first batch and had to let it sit overnight (covered) in a water bath to come down to temp before adding yeast this morning. How big of a problem is this? Can I expect some off flavors? Definitely getting a wort chiller before next batch...

    First Batch

Hi Brad, I got my kit from Norther Brewer. Here are a few of the problems/mistakes I encountered....my grain bag stuck to the bottom of the pot, the aforemetioned burning of LME (I did soak the jug in hot water first, but it sat too long and cooled too much, methinks)... My biggest concern...

    First Batch

I just brewed my first batch (Breakfast Stout) this afternoon....waiting for the wort to cool now. I'm sure I made all kinds of mistakes, but we'll see how it turns out. Steeped the grain bag (a HUGE bag of oatmeal and chocolate malt) in 2 gallons water for about half an hour....stirred it...
