    Adding cherries

We are brewing a mad elf clone and will be adding the cherries this weekend. I have read 2 lbs. sour and 2 lbs. sweet for about 1 month. Any of you guys have experience with this? Also, dry or canned? Pasteurize? Any tips you can give would be much appreciated! Happy brewing!

    German beer

Hey guys! I am looking to make a beer for my wife's 91 year old grandfather. We are all getting together as a family for Christmas and I told him I would have something for him. He enjoys a good, heavy German beer. Anyone from the Chicago area, he raves about the beers at Hofbrauhaus...

    Post your favorite pecan recipe

I can't wait to make this. Let me know if you end up doing it with the vanilla addition. Out a curiosity, how much would you add?

    Post your favorite pecan recipe

This looks really good. I would love to soak them in bourbon while waiting for primary to finish. Do you remember OG/FG by chance? Also, I read where someone used brown paper bags to soak up the oils, but went through about 30 of them. How did you do it and how long did you leave them in the...

    How much cold brew coffee?

We just bottled a coffee porter that we added 4 cups of cold brew to. Unfortunately, after 3 weeks of bottle aging, the coffee flavor is not as noticeable as it was before bottling. Let me know what you add and how it comes out.

    Coffee Porter

Do you have good results with that? Do you rack into secondary? Maybe we will try this method the next time around.

    Coffee Porter

How much coffee do you put in your coffee porter? When do you make the additions? Cold press or beans? We recent made one, put four cups of cold press in for 3 days. Had a great coffee flavor before bottling and now I just have a regular ole' porter.

    Coffee Porter

I recently cracked open a coffee porter that I had recently brewed and noticed it doesn't quite taste like it did before bottling. Before adding priming sugar and bottling, it had a distinct coffee flavor that I no longer get. First bottle was tried at about two weeks and haven't opened since...

    Long Trail Harvest Barn Ale

I appreciate it. I was thinking that would be the case, but wasn't exactly sure. Thinking like the last 5 minutes or so?

    Fermentation question

That is a valid point and come to think about it, all of our beers having been basically pale ales. Interesting to know that could be the cause. I will start paying more attention to the darker colored beers and see if this is a common theme. Thanks for all of the help guys!!

    Fermentation question

I didn't hit the projected FG which was around 1.011. The project OG was 1.045 and I was a little above that at about 1.052-1.054. Here is the recipe I used: 6.6 LBS Plain Light Malt Extract 14 oz. Coffee/Pale Chocolate Malt 1 LB Caramel 60 6 oz. Black Malt 10 oz. Special Roast 2 oz...

    Fermentation question

I have a several extract brews under my belt and normally get a FG of about 1.012 for most of my brews. I recently brewed a coffee porter with a FG of about 1.020. Is it possible I did something wrong? If the temperature is too low, will it cause something like this to happen? I just thought...
