    Yup, brewing in a 100 degree desert will do it. :) You can always add a bit more water to the pot, if needed - it'd be be safe to at least bring it back to a boil before pouring it in your fermenter.

    DME into cold water?

    I usually heat up the water and to 160-170 then add the DME slowly. I make sure to stir the wort frequently for the next few minutes, and then let the water continute to a boil. I have not experienced much foaming this way.

    "Green" Beer

    I couldn't wait either on my first or second - after tasting it a month or two out, I now wait knowing that the ok beer I can have at a week after bottling will be good in three weeks, and pretty awesome at six or more. How did it come out?

    Trying not to let O2 in

    Exposing the wort to oxygen before fermentation begins won't hurt your beer. When siphoning, do it gently - avoid pouring or splashing the beer.

    Thanks for the inspirational story. I was about to dump a batch I had bottled two weeks ago that tasted like a sour punch in the mouth since I'm low on bottles... maybe I will hold out and taste it close to when I need bottles (about 4 weeks from now) to see if it is salvageable.

    Transition to All Grain

    Thanks everyone! I was hoping to pick up 50lbs since I have no LHBS that I can get to carless. :( The mill is a little cost prohibitive for now since i need to make the MLT and get some big pots first... though soon enough (hopefully) my whole apartment will be a brewery. :mug:
