Infected or not this beer will taste awesome. In my experience, when i mess up it just changes my target flavor/style, but its always good.

I see where you are coming from Brick. I would say Dragoon is the 2nd best in Tucson, but they do offer quite a bit on tap and their more popular ones are always around. I think Iron Johns has the best quality and their session IPA was awesome, but you can only get it when its there...

I plan to make a peach cream ale. I am thinking i will let the peaches get very ripe, peel, cut into small pieces then add vodka. What should my peach to vodka ratio be and how long does it need to hang out with the vodka?

The brew is pretty good. Basically its my idea of what a light beer should taste like. Slight hoppy floral taste. You can easily make a few liters disappear.

Its a dark german ale. i had bit to much water and tosses the yeast in around 82 degrees. So, i wont really know what dark german ale should taste like, but i am sure it will still be good.

I used the 7 gallon bucket for the first time yesterday, its pretty awesome. Sadly I opened my freezer this morning to see the airlock had gunked up and spewed wert all over. I was a sad panda this morning before work. I still havent cleaned it all up =/

Abita is more meh, but if you do the brewery its all you can drink. Lazy Magnolia makes an awesome pecan brew. The NOLA is a drinking town, you can find places to drink everywhere and many have good selections.

I have used glass for years and had good luck until I had 2 recently crack. They are also a pain to clean. I know soaking is great, but I always seem to have to use a bottle brush even with the mark II keg washer. I recently got the Speidel 7.9g and threw my 1st batch in it yesterday. So...

So far so good besides spilling my grain in the grass when i was about to add it to the mash. It also took a good 48 hours for fermentation to start and its still going a bit, not really sure if i will be able to rack it within the 6 days claimed. On a side note my chickens now love beer grains.

This will be my first all grain. Shouldn't be too hard, not to mention the small amount of grains.
