    Star San solution too old?

    I keep a solution of Star San mixed in a 5 gallon bucket with a lid on it. I use distilled water so it's still clear. It's more than a year old. Do you think it's still good? The ph is 3, or maybe a little less.

    Erythritol

    I read a lot here about using xylitol to backsweeten cider. But has anyone tried erythritol? I've read elsewhere that erythritol doesn't cause gas or digestive problems like xylitol sometimes can.

    Which tannin?

    I got some wine tannin, and it's a brownish color. But I noticed on another homebrew supply website that they also have a light colored tannin. Am I correct in guessing that the light colored one is grape tannin, and the brown one is oak tannin? Which one should I use for cider, and when?

    Plastic bottle for secondary?

    Is it ok to use the plastic Bubbler bottles from NB, or the Better Bottles for long-term conditioning? Such as a several months conditioning of a Wee Heavy ale, or cider? Or do glass carboys work better for this?
