    Simple setup?

It really doesn't get any easier than BIAB. I've medaled with just as many of my BIAB beers as I have my traditional beers and I get the same efficiency across all my methods. At the end of the day, you have to decide if your sanity is worth efficiency. You said you've been brewing for 8 years...

    Why not use potassium sorbate?

    Wee Heavy Strong Scotch Ale

I've been having an issue with some over carbing so I spoke with some of the local professionals. They say when your beer is fermented out, you can assume that already has a certain volume of CO2 dissolved in solution. What that means to use when we bottle condition is that if you calculate your...

    Festbier BierMuncher's OktoberFAST Ale (AG)

My 10 gallon batch from March 1 is almost gone. Time to make more.

    E/SE Nebraska group buy 2015

Is this still a viable buy? I'd be in for a couple of bags of 2-row pale and probably a bag of pilsner. Let me know.

    Three tier system upgrade fund

Hey folks, I started a little GoFundMe campaign to help with purchasing materials for me and my friends to upgrade our system. The biggest thing is building a tiered system so that when my "assistants" aren't around, gravity can do the lifting for me. We love to brew, we love to share and the...

Belgian Dubbel Belgian dubbel, 1st place DMC comp, 42/50 points

This beer has been on the shelf since I brewed it in December. I think it's finally coming to a place where I can drink it. It was harsh at first but now it's awesome. I'm gonna have to throw a couple more in the fridge before bed so I have some to look forward to.

    Festbier BierMuncher's OktoberFAST Ale (AG)

Brewed a batch for my birthday on March 1. Drinking it now. Gonna brew more for a real Oktoberfest celebration in September. Awesome beer BierMuncher.

    Wee Heavy Strong Scotch Ale

I've brewed this 3 times all with some moderate changes. Grain bill stayed the same with the exception of adding some flaked oats for mouth feel and some carapils to help with head retention. I used hops that are more traditional for the style (fuggles and goldings) and I've been fermenting...

    Wee Heavy Strong Scotch Ale

I just sent this beer with a couple of slight modifications to a local competition. I really don't care how it does, I want judges notes to see what they have to say and to see if my thoughts on other modifications are on the right track. That being said, I've got the malt to do this again...

    Wee Heavy Strong Scotch Ale

I bottled this around two weeks ago. It's starting to get really good. In fact, it's so good that I'm going to make only two slight adjustments to help balance a little bit of the malty sweetness (which I know is appropriate but I want a tiny bit more hops) and make it a little bit more...

BIAB Imperial Stout and potential parti-gyle.

I'm planning to do a RIS soon and the grain bill is 20 pounds for five gallons and expected pre-boil gravity is supposed to be quite high. I'm thinking of something a little more quaffable with the second brew like a porter or a stout. I'm really not that concerned about it since it's really...

BIAB Imperial Stout and potential parti-gyle.

I was reading about this method earlier today with traditional brewing. Have any of you ever done this with BIAB? Would be a pretty sweet way to get a little extra wort out of a big batch of grain.

New Danstar Belle Saison Dry Yeast?

I just bottled a beer that I used this in. I love it. It's an angry fermenting monster though. It created so much krausen that after it settled, I was concerned there was an infection. My beer started at 1055 and ended around 1002.

    mixing liquid and dry yeast?

I've been making starters 10:1 water to DME and pitching my yeast to that. I've been making big-ish beers so a lot of 1.5 liter starters. Mr. Malty's calculator is sound and handy as hell.

What yeast should I use today?

Unfortunately, I live in an area where Bell's isn't distributed. I think that I'm gonna stick with my original plan and use American Ale and finish off Thames Valley in the other 5. I like what the characteristics that Thames Valley displays and I hope that I can keep my temperatures in check...

What yeast should I use today?

My buddies and I are brewing again this weekend. 10 gallon batch Irish red grain/ hops bill. I'm gonna pitch American Ale yeast in at least 5 gallons of it but I'm wondering what to pitch in the other 5. I have a packet of Wyeast Thames Valley that I need to use but what kind of weirdness can I...

A question regarding strike water volume.

I should note that I have been trying to have enough volume to accommodate grain absorption, boil off rate and desired final volume which, has worked out fine until the last batch. But, as I said earlier, learning the new equipment, I'm sure, is key.
