    Red Star

Okay - flirting with 1020 is not a good idea if you want to bottle. Some other threads I've read said its just a matter of pasteurizing. The question is when? I did ferment dry and found it not as as satisfying frankly. I think going to 1010-1020 tastes better. Why go through all this work and...

    Red Star

Howdi cider folks - I made a batch of apple juice cider - mostly to get a handle on the yeasts to use. Starting point was about 1070 with a Red Star champagne yeast. I wanted to ferment to 1020 or so, then bottle which is what I did. Wow. I used the grolsch top and filled a few plastic...

    Apple Concentrate Online

Nice advice boys. I will do that freeze concentration. Sounds like a winner.

    Apple Concentrate Online

Hmm. Make my own concentrate you say? Sounds like a good idea. I haven't thought that out to even look for a how-to. For it to work, has to include boiling down and evaporating to get it right. I will look into that. For this batch I am not as concerned. Its 5 liters at 2 bucks a liter, so I...

    Apple Concentrate Online

I live in Denmark and I cannot find apple juice in concentrate from. These are ubiquitous in the states. Anyone know of an online seller of such wares? I bought a bottle of apple flavoring last year - organic, good in a pinch, but I want to just try what all the others kids on the forum have...

    Carbonization

My question is - do I pitch some yeast in the next 10Liter batch before bottling so give carbonization a chance? Made my first batch in autumn that I racked to two 10liter carboys. I bottled the first to plastic bottles. I put in a teaspoon of sugar per bottle and let it sit for a week...

More advice please - secondary fermentation

Darn - I just dropped the powder in - I crushed it well - but no mixing with water. Next time. I did shake it a tad. When I re-rack it on Monday I'll make sure its stirred a few times. That begs another question - the stirring part. Now I want to rid the cider of oxygen - by stirring presumbly -...

More advice please - secondary fermentation

ok. This needs to wait 2 days unfortunately. The brew shop is closed on Sundays. I have plenty of campden. I'll drop that in now. Not worried about fermentation anymore. Very little sugar left. That will buy me some time to figure out my next steps. Thanks for clarifying. One more question then...

More advice please - secondary fermentation

truth be told - I dont have bottles handy. I was going to wait to buy that - in a month or so - so it wouldnt be sitting around. Plus I haven't decided if I want to continue with homebrew to be honest. Or rather, how I should continue. I get buyers remorse rather quickly. The more I read about...

More advice please - secondary fermentation

I dont have CO2. I actually would prefer to secondary this because I would like it to clear some more. Its rather cloudy - the filter bag I used during pressing wasnt fine enough and a decent amount of chunks got in. Do you think its a mistake to add the raw cider in to top it off?

More advice please - secondary fermentation

ok. Primary fermentation is done. Its about dry. I moved cider from bucket to a carboy I bought used from some dude. It was an all or nothing deal - 3 carboys - 1x 20 liter and 2x 10 liter (pyrex). My bucket had 25 liters. I just moved the 25 liters to 20 liter carboy - doesnt make sense, right...

    Advice needed

ok. Not sure if I made a mistake last weekend but I see I am at 1006 now. So there was a slowdown for a good reason. For sure it was bubbling about 5-6 times an hour 2 days ago, then stopped. Boom. I tasted it and its not so bad. Definitely not sweet. Not yeasty like the last time I tested. So...

    Advice needed

Fizgig - 25 liters of homemade cider from dry apples in my yard - not edible but juice up nice plus some sweet (but not too) from an orchard. Campden in for about 36 hours then I put in Safale S-04 and put in a bit of yeast nutrient - about .5 tsp per gallon - about 2 days after I pitched. It...

    Advice needed

OG was about 1050. I tested it again this week after 2 weeks and it was around 1020. The problem is it seems to have stopped bubbling in the airlock. I have read that we to be patient here. And its a bad idea to add yeast nutrient in the final stage. But is it a mistake to sit and wait another...

It's been 2 weeks and my cider is still bubbling the airlock

Maylar - similar situation. At the start i was at 1050 and now at 1020 after 2+ weeks. The bubbling has slowed actually. I have put nutrient in in the first week, but wondering if I should now, again. If so, how much? I forget how much I put in before, but not a whole lot. Maybe 2-3 teaspoons in...

    Help! First batch ever

Ok. Got a ring with a big dot in the middle of the bucket. Have not opened the lid or anything. I saw some pictures of fermenting cider and this looks something like it. I think I was expecting a frothy mess by now, but I guess its still a wait n see situation.

    Help! First batch ever

Ærating - thats pretty much what I did. The bucket is heavy, so I couldnt do too much. My gut feeling is the yeast should have been activated as you say. And I should have measured the SG. The bucket was quite full and I dumped some out and its in the freezer. I could probably measure that to...

    Help! First batch ever

Yes - I did shake the bucket but not super vigorously. Ok. Forgot to mention. I put 1/4 tsp of campden per gallon in the day before. I heard I should wait a day. I have since read - 2 days. That could be a problem as well I was thinking. The other thing I realized. I have a hydrometer. Never...

    Help! First batch ever

At the risk of sounding stupid - I dumped a packet of Safale s-04 into my fermenter. Several gallon bucket. Its a day later and I dont see anything. Was I supposed to mix this first? I peaked and didnt see anything going on. I have some yeast nutrient on hand but thought I 'd wait to see what...
