    Adding cinnamon to secondary.

    One word of advice with cinnamon sticks...make sure you're actually getting cinnamon and not cassia. Many sticks are sold as "cinnamon" when they are actually cassia. What's the difference? Cinnamon = cinnamon rolls and apple pie. Cassia = red hots and cinnamon toothpaste.

    I've found in general baking coconut flavoring to be pretty horrible. Tastes like bubblegum. You could have used coconut rum in place of straight coconut, or if done in advance, you soak toasted coconut in vodka, grain alcohol, or rum to draw the flavors from the coconut, and then add that now...

    wilserbrewer BIAB bags

    Just finished my first brew with the wilser bag, and it is so bad @ass. Wish I would have gotten this bag sooner! Ample room in the bag, secures great with the draw string and pinch-hold thing, catches so much more grain sediment, and it cleans beautifully. Customer for life! :rockin:

    The scoby formation depends on the time. The stronger and blacker the tea, the stronger the scoby forms (and more vinegary the taste). Lighter teas make slimmer scobies. But the magic is they all work, skinny or fat ;-)
