    Joe's Ancient Orange Mead

It's been about three months, the mead has cleared and the fruit dropped but it's still sickenly sweet. I already bottled it but is there anything I can mix it with to mellow it out while drinking? Or will time still help with the sweetness? I may have to open a bottle to test gravity but...

    $7 wine corker review.

Thanks for the review. I might give this a go as I'm not sure that I will ever cork another batch after this one. (And if I do it was only 7 bucks!) Thanks for taking the time to write it up.

Substitute DME for X in Starter...?

I'm going to make a batch of SkeeterPee this weekend and I don't have an active yeast cake to use so I was thinking of trying my hand at making a yeast starter. The only problem I have is that I'm really allergic to Barley, so I need to stay away from DME. What other alternatives do I have...

Thanks! I'll add a little more spices and call it a day. Seems to be bubbling pretty good now.

Joe's Ancient Orange - Question about sizing and air at top...

Cool! Thanks as a noobie I sometimes get too deep into the forums and then start second guessing myself. I know this is an easy brew but it's the unknown that haunts me! (Plus the 60 dollars in honey I have in it =P) If I start to stress about it, would it hurt anything to top off with...

Joe's Ancient Orange - Question about sizing and air at top...

I wasn't getting the answers I needed on the recipe forum, so I thought I would give this a go. Hopefully someone with some JOAM experience can give me some help. I probably should have thought of this before I started my brew but..I only have 5 gallons in a 6 gallon container? Is that...

    Joe's Ancient Orange Mead

Another question....I probably should have thought of this before I started my brew but..I only have 5 gallons in a 6 gallon container? Is that going to cause a problem? Will the extra air be an issue? If so, can I put another 2.5lbs in and top it off with water once the foaming stops...

    Joe's Ancient Orange Mead

I have a couple concerns about a batch I made last night. I've seen a couple places people complaining about the orange rinds in this recipe. I made a 5 gallon batch and put 5 oranges in rind and all. Am I going to have a problem? If I do, is there anything I can do about it? (Like scoop out...

How long to start bubbling? (Joe's Ancient)

Hello! I just made my first batch of Joe's Ancient Orange and was wondering how long it takes to get going? On his recipe it says within an hour but It doesn't seem to be bubbling yet. (At hour 2) (There is pressure, just no bubbles) I made 5 gallons and I couldn't find specific...

    Joe's Ancient Orange Mead

Thanks! I've read that too so I only put in 3 sticks. Hopefully that tones it down a bit. Waiting for it to get to room temp before I put in the yeast, any other suggestions?

    Joe's Ancient Orange Mead

Hello! I'm making my first ever batch of mead and decided on this recipe. I'm going to make a 5 gallon batch but in the instructions it says to increase everything equally as you go up, does this include the yeast? So for 5 gallons would I put in 5 tsps of yeast? I thought I read in one of...
