When I'm smoking something for a long time I will add a few unlit coals every 30 to 45 minutes. This seems to hold the temperature well and no need to light them.

Thanks! Me too, haha. I was playing with some label ideas that day and finishing up the recipe. Need to have a brew day real soon so it's ready before October.

While I don't have a lot to add in terms of technique I would like to say that I came to HBT for the beer and was pleasantly surprised to see everything else there is here especially grilling. My weber kettle and genesis are like my children.(Shh. Don't like the old lady know.) Anyways here...
