    WLP400 question

I had 2nd krausen appear at 2-3 week mark too. I wasn't sure if I should bottle it or not. I ended up moving it to secondary for a week and it cleared right up.

    WLP400 question

Takes forever to get going and has huge Krausen. I had a 1/3 of the Carboy in headspace and thought I didn't need a blow off tube. That was a mistake. Looked like a volcano erupted:) Produces delicious and slightly sour fruit flavours in the mid 60's.

Munich Helles BierMunchers “Helles Belles” (Munich Helles, AG)

Just made 5 gallons using WLP029. Love this yeast in other beers. Takes a long time to drop but worth the wait. What I forgot to do was cut my hops in half on this recipe and now have a bitter Helles to enjoy over the winter. Not what I expected but tasty. Mashed at 155 and has a wonderful...

Eternal Kräusen - is it safe to bottle?

New Krausen appeared in my primary. Also used WLP400 and wondering if it's common with this yeast?

    Saison Temperature Rollercoaster

The change is temps are not ideal but better than having it ferment in the 30s or 40s. I have brewed the 565 a few times and never had it over 75 so I think the lowed temps of 65 should be fine. Might not have the spicy phenolic flavours that are thrown off with higher temps but a tasty brew...

Belgian Blond Ale SWMBO Slayer - Belgian Blonde

Made this yesterday and still waiting for the WLP400 to wake up and get to work. Made a 1litre starter and still no sign of fermentation at 36 hour mark. Patiently waiting for signs of life. The starter smelled fantastic and I am already looking forward to the beer this yeast is going to make.

WLP568 off flavors for to low of temp?

This is a great yeast and under appreciated by most IMO. I think the blend throws people off. Ferments out at most temps and has delicious fruit and slightly phenolic flavours. Touch of pepper if the heat gets ramped up at the right time 3-5 day mark. I haven't had it over 77f but might...

    Aging a Kolsch

Fermented WLP029 at 57-60 for 4 days them free rise to about 66 for 2 weeks. Hydro sample taste like banana juice. Any one else have this with 029? Will it mellow out with age?

    Kolsch WLP029 - Cold Crash / Kegging / Conditioning?

Just tasted my hydro sample. Total Banana flavor. Fermented at about 58-60 for 4 days. 65 for a 2 weeks. Still in Primary. Any or have same experience with WLP029? Very sterile environment. Infection not likely but possible I guess. Will it dissipate as it ages? Tks

    White Labs WLP565, Belgian Saison

I split a 6 gallon batch of Cottage House Saison. 3 gal with WLP565 and 3 gal with 3711. Most preferred the earthen, fruity and tart flavours of 565 over the more peppery flavours 3711. However, does not finish as dry as other Saison yeasts. Can't wait to use the 565 again. Makes a great...

American Pale Ale Cascades / Orange Pale Ale

Definitely brewing this again. Just Served 10 gallons at a hall party and keg blew in 2 hours. . Some said best Pale they have ever had. I doubled the orange peel and it was a bit too much for me. Will scale it back for my own brew. Phenomenal recipe otherwise.

Funny things you've overheard about beer

When I was a boy I used to go with my grampa to take truck loads of logs to the mill. Once we were at a weigh scale and my grampa noticed that the regular guy was not there. He asked where "Quincy" was and the guy said he was down checkin the rabbit snares. My grampa bit and said he didn't...
