    Date molasses - How much for a Belgian Quad?

    You can get date sugar from Shields online. I just visited them and came home (Idaho) with a 1lb bag of date sugar and 20lbs of dried dates and I'm really not sure how to use them. Probably in a brown, porter or stout. Keep us updated and let me know if anyone has suggestions.

    Mashing Dates

    I just got back from the California desert with a 20lb box of dried dates and some date sugar. I was wondering if anyone has tried a porter or a brown ale with dates? I was thinking of using sugar as a late boil addition and just racking the brew on dates in secondary and leaving for six months...

    I'm sure it's been covered here but...

    Have a Kriek that's been bubbling away ( very slowly) in secondary now for 6 months. I just bottled half of it without any new yeast for carbonation. Question... Is there any yeast left for carbonation? Will the Brett carbonate it since it was still bubbling? How long might it take?
