    First time with beer/extract. Couple questions

    Don't use store bought ice. I pour two gallons of bottled water in 2 Rubber Maid containers that have been sanitized with StarSan . I then put it in the freezer 2 days prior to brew day. Haven't had an infection yet which is a concern when using ice.

    That is what the recipe called for. Of the 10 lbs of extra light malt/sugar, 2 pounds of the malt were added in the beginning of the boil. The remaining 8 pounds were added with 5 minutes left.

    I buy all my extracts from Jasper's Home Brew and they indirectly supprt this in many of their directions. Many of them tell you to boil with 2.5 gallons to extract the desired hop bitterness. Where I read about 5 gallon brews producing more bitterness I simply don't remember where I read it.

    Yes and I have read that hops bitterness is a lot more pronounced when doing a full boil with the same amount of hops that is used in the 2.5 gallon boil.

    I second that. I've ordered numerous kits from Jasper Home Brew (boomchugalug.com) and every one has been excellent. You are also correct in getting quick feedback from them. I buy exclusively from them now since they offer so many styles.

    My First Brew Experience Today -- Wort In Fermenter

    My only suggestion would be to use a double mesh strainer since you are using a sanitized bucket before the carboy. Those strainers that fit into the funnel are too small and clog easily. Other than that your fermentation looks great.

    Best Kit You Ever Purchased

    The majority of my extract beers has come from NB. Recently I tried Jasper's Homebrew in Nashua, NH. Their extract kit, ***** on Wheels (ABV of 9), is outstanding. Of the 25+ brews I have done so far, everybody that has tasted it says it is the best by far, Hands down.

    Totally agree. I've used Jasper 3x and each extract kit was excellent. Squeezing the malt extract took a while getting used to. I will ordering more from them in the future.
