What Type of Monster Have I Created?

The recipe is from 'Beer Captured' and it lists John Harvard's Brew House in Connecticut.

How many brews have you dumped??

I've only pitched the dregs of a watermelon wheat that started to get funky towards the end of the keg. Other than that, when I first started, I tossed those bottles that ended up foaming over and losing half the beer to the sink anyways - over carbing was the push I needed to start kegging.

What Type of Monster Have I Created?

About a week and a half ago I set out to brew an Imperial Stout (see recipe below). However I made a crucial error - I went to my LHBS and they did not have any DME, so I did a quick conversion to LME, but I did it backwards and instead of getting 11 lbs of DME I ended up going home with about...

    Dave's Carmel Apple Cider

Wanted to add my $.02 as I really enjoyed this cider and so did my friends! A couple of tweaks: *Used Mangrove Jack's cider-specific yeast (M02) *4 12oz cans of apple juice concentrate (my mistake) I thought this was a fantastic cider. It yielded close to 5 1/2 gallons after all of the...

    Yeast Blow Off Harvesting?

Recently brewed a stout with 1056 American Ale yeast. Had a pretty vigorous fermentation. The carboy had a blowoff tube running to a 1/2 gallon of sanitizer liquid. The blow off sanitizer liquid turned brown from the beer and there was a fairly solid amount of yeast actually in the...

    Krausen Explosion w/ Pictures

Beer is ranging between 18.5 and 19.5C or about 65 to 68 degrees...ambient. I taped the probe to the carboy last night after first feedback to see if that was more accurate.

    Krausen Explosion w/ Pictures

Thanks for all the feedback folks. I'll shorten up my blow off tube. Not sure I'll have room for an 8 gallon fermenter but I'm going to take measurements tonight to see if it fits. Any thoughts on how to insulate the probe properly? I haven't figured out how a thermal well could be configured...

    Krausen Explosion w/ Pictures

Hi there, Background: I am brewing a stout and the krausen has gone nuts. I was prepared (so no sticky ceilings!) and put together a blow off tube into a gallon jug of sanitizer solution. Only problem is that the gallon jug overflowed down into the bottom of the chest freezer, and last I...

What volume of water, temp, time, timing, to steep grains.

My big question that I have about steeping grains is temperature control of the water. I have a gas burner for the boil but use the electric range for getting the water up to temp for steeping. My problem with that is that it is difficult to keep the water in the steeping not boiling range so...
