Spruce Tips are Popping...Do I Dare???

I was just logging in looking for some insight on spruce myself. No need to ask any questions, I found everything I was looking for in this thread all ready. Thanks for the info folks. I'm going to be adding some fresh spruce tips to my next wit. Orange peel, coriander, chamomile, and spruce in...

    mixing witbier and cider

The other night I mixed up some of my spiced witbier with some of my own hard cider. The mixture was 2 parts wit, 1 part cider. It was very tasty. I figured I'm not the first to try such a thing and enjoy it, so I was wondering if there might allready be some sort of proper name for such a drink.

    Reusing bottle caps

I've thought about this too. We've been saving caps at my house for a while now. I (at least) have been very careful when prying them off. But I have yet to risk even one beer by reusing a cap, as they are fairly cheap. Being cheap for us isn't the issue so much as just being hell bent on...

Bottle safety, Are there bad bottles to use?

I've read that twist off bottles tend to be thinner glass and should just be avoided. I've also read on the forum here, that some folks have used twist off bottles without issue. I often hit up a local recycle container and grap pop top bottles from there. There is no shortage of good bottles...

    Chocolate Cherry Oatmeal Stout....

That sounds so yummy mmmmmmmmmm I can't really answer your question. I'd like to hear how it turns out for you. What you may want to do is search the site for other peoples reactions to using certain amounts of cocoa and cherry in thier own attempts. I plan to make a chocolate, peanut butter...

    Holy bitter beer Batman!

Good Luck! I hope that shelf is stronger than it looks. I had a whole batch of sour beer a while ago and it didn't seem to be getting any better with age IMHO. I fed it to my roomates and they loved it and drank the rest of the batch that night*shrugs*.

    Garlic beer

I'm in the middle of doing some homework about garlic beer myself. Bare with me as I dig up this month stale thread. It's one of the many reasons I decided I wanted to start brewing my own. I love garlic. I'll eat whole cloves raw. I'm a big fan of the phrase "lets eat garlic and make out"...

    Steel Reserve 211 clone?

For real... This crap is something I've had more than I care to admit here. Yet the truth is, if I can make a 211 clone, IMHO I should be about to do it at nearly 5 bones a gallon. There must be a metric ass ton of table sugar and who knows what other cheap crap. Anyone ever seen a 211 clone...

    How would you go cheap?

This whole thread I find 100% confusing. I brew with extract and get a 6 pack in the end, that (I think) is far better than most pricey beers, for about 2 bucks a 6 pack. That's less then I can pay the cheapest macro brew available. Maybe It's just that I'm in Chicago? I've been reusing my yeast...

more coffee talk - intoducing coffee at the bottling stage?

I have a batch of porter that I'll be bottling this weekend and I keep kicking myself for not making it a coffee porter to start with. I got the idea in my head to brew a nice strong pot (mabey two, I like LOTS of coffee flavor) of coffee with my favorite pre-ground (that I can't find as a bean...

    Coffee Porter

I was just about to ask some more specific questions about this myself. I'll toss in my own two cents here though. I've bought a lot of coffee beers and I never ever liked them. I've made a couple of batches of a coffee porter that turned out to be the best coffee beers I've ever had. In both...

Greetings from the city of Chicago

Hey folks I've been lurking around here for a few months. I've learned a lot from this site, so thanks to all of you who have helped to make available the information contained herein. I have my ninth and tenth (extract) brews fermenting right now. I'm planning on growing my own hops...
