    I have always got more fruitiness using S-23 than I wanted. Your fermenting schedule is the same as mine and I too get good results with that.

    Advice on how to enjoy homebrewing over the years without becoming an alcoholic.

    I just don't brew as often as I used to. I have all of these empty kegs in my basement and I would love to fill them all, but not anymore. I am close to 70 now, and just can't drink as much as I used to. Since I live in Canada, buying beer is expensive and I try not to do that a lot.

    One of the biggest homebrew stores in Canada went out of business in Toronto. This one has raised their prices at least 4 times in the last few months. I guess they are taking advantage of supply and demand.

    I am more comfortable making starters. Once I figure out how much slurry I really have ( always a guess ) and just go ahead and make a starter with an over build. Most of the time the starter isn't that big depending on how much slurry I have.

    Brewing a Cream Ale today. Hoping the 15 IBU isn't going to make this taste too sweet. 7% corn sugar will dry it out I guess. Horton Ridge Organic Pale Ale Malt 1 lb. Corn Sugar the last 10 min. of the boil. Hallertauer hops. US-05
