    Fermentation Fast Start

I've got a couple of dozen extract brew days under my belt now with very good results. I brewed an English Pale Ale this morning. Basically a routine brew day. I chuckle when I think how stressful my first was . . . . planning everything out, trying to sinc everything, worrying about...

    Need Advice . . . . Honey-Wheat Ale

Well this thing as been an experience. Fermentation went pretty much as expected until it started really reeking. Got through that stage. The fermentation is pretty much over. SG is OK. Had been in the primary for a couple of weeks. Racked to secondary today. Lovely butterscotch color...

    I have decided . . . .

. . . . . that the most essential experience of home brewing is that of continual insults to the olfactory. I am really beginning to push the envelope with SWMBO these days with my love of Apfelwein and wheat beers. I started a honey-wheat concoction a few days ago which would gag a maggot...

    Red Top Ale

After I got interested in homebrewing, my Father and Aunt made it known to me that back in the 1940's/50's my Grandfather was into homebrewing in Southwest VA.. They know this for a fact because they used to secretly partake of his efforts. They indicated that he brewed a concoction called...

Dispensing Question . . . Keg Sucks back Beer

Using a 4' line with picnic tap. Beer pours fine but afterwards it appears the beer in the line is moving up and into the keg. Next pour has to then displace air in line. What could be happening here?

    Correct Dispensing Pressure?

If I do the math to balance the dispensing of my 2.5 Gal corny keg out of my fridge, I come up with about 10 psi. This is using about 4' of 3/16" and a picnic tap. The instructions that came with the keg say dispense at 3-5 psi. Which is correct?

    Infected Brew Appears Normal!

Is it possible for infected wort to appear totally normal, i.e. fermentation, krausen formation, etc.? In addition to bad taste/flovor, would there always be some physical manifestation of ther infection?

I Want To Start Kegging, Does This Make Sense?

I don't currently have the room or desire to use 5 gallon kegs. I am reserving this for the future after I relocate and construct a new home. What I would like to do now is to learn how to keg with the intent to meet 2 beer despensing goals: Goal1: I want to put together a portable...

    I'm Hooked!

What a great hobby! I took up home brewing in January of this year. Started with an Irish Red Ale. This was followed in quick succession by a Boston Stock Ale, German Wheat Beer and English Nut Brown Ale. Two days ago I started 5 gallons of Ed Wort's Apfelwein. Everything I have tried...

    Hydromter Question

Scale embedded within hydrometer specifies that it was calibrated at 60 Deg F. The correction table provided with the hydrometer shows 0 correction at 68 Deg F and -.001 at 59 Deg F. So is the hydromter calibrated at 60 or 68?

    Hydrometer Bad?

Fermenter for 1 week. Secondary for one week. Got a strong fermentation. Measured gravity, corrected for temperature at 1.022. Final gravity target is 1.01-1.016. Beer looks and tastes as expected so checked hydrometer with tap water. The temperature corrected reading is 1.006. Do I...

    Bittering Hops Introduction

I am doing my first brew today. Irish red ale. Instructions say to pitch bittering hops at beginning of boil. Palmer seems to favor waiting to pitch after the hot break to reduce boilover potential. Seems reasonable. Opinions for or against? Thanks.

    Steeping Sequence

The instructions in my Irish Ale kit specifies steeping the specialty grains after dissolving DME but before reaching boil. I note that Palmer prescribes steeping the grains in clear water prior to adding the DME. Which is preferred and why? I think I am partial to steeping the grains in...
