I go with 85% to 95% pils with remainder using munich or vienna and, optionally a bit of wheat. For hops, I go with any Noble hops at about 20 to 25 IBU: near all at the bittering addition with a small flavor addition. IMO, the individual variety of Noble hops isn't terribly important. I...

The process that I follow is: once fermentation is complete ( and given a few days), I rack to a keg that I use as a brite tank; cool to serving for 24 hours, add gelatin, given it 4 or 5 days and then closed transfer to a serving keg. The Wyeast Kolsch strain takes a long time to clear, IME...

IMO, Pacman is a great general purpose yeast for styles where a neutral yeast character is preferred. You can ferment down to 60 and even lower. I reuse Pacman with great results. Before you pitch onto a yeast cake, read this excellent thread. Bob makes a lot of good points, But, as always...
