Amylase has become my best friend in dieting.

Yeah, so you're ending up with less carbohydrate mass at 4kcal/g and slightly more ethanol mass at ~7kcal/g. You're doing nothing to the total calorie amount ingested unless you pour some out on the ground.

    Homebrewers in the Antelope Valley

My first time in there to buy good beer was about 10 years ago. Back then, the beer selection was vast, but like others had mentioned, it didn't look like the stock was rotated very frequently. But I have to say, each time I've dropped in there over the past 5 years, there's always tons and tons...

1950s GE Fridge to Kegerator - with some mods

Oh, I do all sorts or refinishing projects like this. It would be awesome to have this guy out on my little balcony! I've got a tall stainless work table that works perfectly as a small project spot. I've rebuilt a lot of vintage espresso machines and various gear like that using it. If I had...

1950s GE Fridge to Kegerator - with some mods

This great thread immediately came to mind when I saw this just now, listed on Craigslist in the SF Bay Area. A 50's steel fridge that has some nice curves. Someone should definitely snag this. If I didn't already live in a cramped apartment with no space for another project, I'd probably jump...

Help me name this Beer! (Image)

If you bottled it, you'd have to include a label with THAT photo! You could name it something ridiculous like "Get 'er Done!" And you'll likely have buddies mentioning it for years to come.

You're totally right, I meant to write Avenue K. I still avoid the bottles down lower that are covered in thick layers of dust.

What's the worst craft brew (commercial) you've had?

Peak Organic Brewing Company Oak Aged Mocha. Just opened it about an hour ago and couldn't get thru more than three small sips, one getting worse than the last. It was acrid, disgusting on every level imaginable. The aroma was a sign of the weirdness to come. I was intrigued with the...

    toasting my own specialty grains.

I've kicked around the idea of roasting my own grain just for fun, since I have a solid drum coffee roaster. It would be fun to experiment, but my main concern would be having some kind of high sugar/starch, easily carbonized residue left over when I subsequently roast my coffee (at much higher...

Primary in a Rye Whiskey Barrel

I'm preparing to do something somewhat similar, minus the primary ferm part. I picked up 3-5 liter toasted American Oak barrels from eBay. I'm planning on trying different things with all three. This is the first one where I'll age a white rum to tame some of the barrels toast components...

do you roast your own coffee beans? why not?

I've been homebrewing ( originally as dad's brewing assistant :) ) since the mid 90's. Then, once on my own in 2001 I started doing my own extract brewing. That was when I discovered the coffee roasting gear in the Williams Brewing Catalogue. It got me into home roasting green coffee back when...

Why don't we stir the fermenter?

I'd imagine if we could aggitate without actually introducing any room air or O2, the aggitation process itself would initially speed up the fermentation process, but like it was stated above, it would need to be earlier in the fermentation, since you'd still want to end up with clear beer when...

    Top Pressure

I found this article about pressure's effects on fermentation. Basically, fermenting under pressure reduces ester and fusel alcohol formation. It is used to make cleaner lagers. From:FERNANDES P. M. B. How Does Yeast Respond to Pressure? "The brewing and baking yeast Saccharomyces...

Composition of gasses in the headspace during active fermentation?

Not entirely correct, the yeast only needs O2 in the very beginning, so to say it's needed for fermentation is actually false. That O2 gets used during the yeast cells lag phase, eventually being used to build healthier cell walls. it's no longer in the fermentor in the same way free O2 is...

No, but a Thermenator is. :)

    Homebrewers in the Antelope Valley

So cool to see my home town pop up on here. I grew up in Quartz Hill, then later, Lancaster. I didn't even know there was a brewery out there. I haven't been back to Lancaster for 2 years, but one amazing gem in that desert town is that liquor store on the NW corner of 20th West and Ave J...

    Best thermometry method for fermentation?

Just bought a carboy heater wrap, thermowell and a dual temp controller to go along with the rest. i have at least 6 different thermometers/thermocouples from various manufactures that are calibrated to my altitude and accurate within 0.5ºF I use them primarily in my commercial grade sampler...
