I brew in ottawa/ kingston and source hard to get things off canadianhomebrewsupply.com. They have amber malt (just not Thomas fawcett).

Try Defalcos in Ottaw. They have a few stores and can get all you'll really need. Canadian Homebrew Supply will also ship what you can't get at Defalcos.

Just pitched 2 packs of 3278 (24SEPT12 MFG date) that did not swell and so far no activity after 12 hrs. I think this is normal. Any update with your experience?

I'm looking for advice on lambic blending for carbonation (making gueueze). How do I know what ratio to blend with to et good carbonation without bottle bombs? I'm planning on using champagne bottles. Can't seem to find this nfo in wild brews.
