    I jello crash all my beers and they have all carbed at room temp in 2 to 3 weeks. (including w34/70 beers) not sure what these other guys are talking about...

    Exactly, and you've spent more time and consternation on it than I have/am gonna. I didn't even really care for the guy, but he was always nice to me and we could talk about beer, so if I want to (potentially) waste a gallon of wort on what is, in fact, a decent idea, I'd drink it myself...

    I'm assuming it was kept in the fridge, and I'm not married to it, not really interested in a starter, and in fact, have never used liquid yeast...have been brewing for 8+ yrs and have only used 05/04/34-70 dry yeasts I'll probably just toss it.

    My dad had a buddy that he made wine with. Said buddy also brewed beer. Buddy died and dad ended up with his yeast. I now have a smack pack of Wyeast 1084 with a born on date of Sept 2015. Not worth the trouble, I'm assuming?

    S-05 Krausen still present?!

    couple things... S-05 isn't a lager yeast...It's sweet spot is 65* +/- a couple...could let it go warm for another week just to see if it helps could also be done, it is a milk stout after all....I can't get mine down past 1.028 or so b/c of the lactose next time, do it in reverse. a week...

    Anybody Ever Make Chipotles In Adobo?

    I've smoke dried red jalapeños and then ground them up for chipotle powder, but never the adobo part. I topped and cored them (like you would to stuff them) then nipped the ends off for air flow. Didn't take nearly as long as I thought it would. You do want to start fairly low on the heat...

    no. set that ***** at 35 and let 'er rip. If you want to jello fine it, set it to 50, put in the jello when it gets there, then go to 35.

    Basement every time for all normal beers. If you are making the stuff that tastes like dirty socks, then by all means, put that crap in your hot closet.

    Pale Ale recipe thoughts

    Your all 'c' hop bill is just fine. (also not a SN clone) There are plenty of great beers that use Columbus all the way through, including as a late addition or *gasp* a dry hop. Don't let all these 'if it ain't a juice box, it ain't good' types steer you away from the classics.

    One and only apple yeast.

    Hmmm....I did use a bit of nutrient....but dry sprinkled the pack and it was a month or two past date.... I bumped the temp up to 67* and gave it a swirl. Will check it again in a few days.
