    Extract pumpkin amber ale

Making a 5 gallon full boil extract pumpkin amber tomorrow, from items picked off the shelf of my lhbs, and would appreciate any pointers if any of the ingredients may not be suitable. This is my first beer that hasn't been a kit!! Heating 1 lb 2 row barley 20 mins then removing 3.3 lbs amber...

    Omitted hops....

Thanks Curtis! I was thinking of getting an extra oz of cascade and making the tea with 2oz. Would this be too much or help make up for the first mistake?

    Omitted hops....

Couldn't find anything on hop tea. Could I just boil the hops for 10 minutes in a couple of pints of water and add to fermenter? Is there a best or worst time to do that? ASAP? After fermentation is complete? Thanks

    Omitted hops....

Brewed a pale ale and accidentally missed cascade addition (1 oz) with 10 mins left of boil. Would adding it to primary after 7 days work or should I do a secondary and dry hop then, or should I just chalk up to experience and read instructions more carefully in future?

    Time to experiment....

What other flavors would work with an ipa? Any fruit or spice additions. Really looking to use this as a chance to try something different with a split batch. Vanilla? Coffee? Strawberry?

    Time to experiment....

Have done 10 extract kits, now looking to have some fun with this. I have a wyeast 1056 yeast cake to reuse, and a willamette hop packet that was in my last kit, that shouldn't have been, so looking to use that. Thinking about buying some dme, using 1056, then maybe splitting the batch and...

    Cold chilling

I have had a pale ale chilling in a fridge for 4 days after 14 days primary fermentation. I am chilling to improve clarity. I will be bottling the beer, but am not sure how long is a good time to chill before I do this. This is my first time cold chilling before bottling. Is 4 days enough or...

    Gelatin

As a vegetarian I don't wish to use gelatin to clear my beers. What is the best alternative, and would a vegetarian gelatin, such as at http://shop.maryjanesfarm.org/store/p/65-ChillOver-174-Powder.aspx be effective? Is it a property of gelatin itself that clears the beer?

    Beer lao

I live in SE Tennessee, and would love to get my hands on some beer Lao (regular not dark, ideally). Anybody know a place within driving distance I can pick some up? I had the dark version when I visited Charlotte nc recently, but haven't seen the original lighter version. Thanks

    Chilling during primary

Yes, cold crash, not lagering. I read various posts about using sanitized foil and securing it firmly to the fermenter. It seemed fairly foolproof and avoided any water being sucked in from airlock. Fridge has lots of bottles of beer in, nothing else. And day 14 as I always do 2 weeks...

    Chilling during primary

I was planning on putting my primary fermenter in a spare fridge around day 14, and leaving it there for a week. I will be removing air lock, covering with foil for suck back, etc. any other issues or advice. I don't think I have a way of chilling incrementally over several days as I have heard...

    90 minute boil

Yooper, why add half of the extract at the end? If that is better why do the instructions not recommend that? Thanks.

    90 minute boil

I have heard 90 is better than a 60 minute boil. What are the benefits, and how would I adjust the timings of my hop additions? Would I boil the extract for 30 then start following the directions? I use NB extract kits. Thanks.

    First full boil

My favorite beers are actually ipa's, so I can live with 60 ibu's. also, I bought 2 kits (reusing yeast cake) so will do 1 as the instructions call for and 1 with less hops at the start, and see which I prefer in the glass. Thanks for the help everybody.

    First full boil

Fwiw the kit I am making is NB tcan and bearcats wheaten beat down. Calls for .75 oz Yakima magnum hops for 60 mins, then 1 oz of willamette and cascade 10 mins before end of boil. How would I do this for a full boil?

    First full boil

I have a 40 qt stainless kettle but will be using it over 2 electric range eyes.

    First full boil

I have heard some people start out with more than 5 gallons to get to 5 gallons at the end, with wort lost to evaporation? Is this true, and what is the amount needed to end up with 5?

    First full boil

Just bought a 10 gallon kettle and am about to do my first NB extract kit, after doing 8 partial boils in a 5 gallon kettle. Do I need to make any adjustments to the instructions, or is it as simple as boil 5 gallons of water, add extract, hops, cool and add yeast per instructions, with no...

    Kettle upgrade

Thanks for replies.... And actually as I posted the question I found a 10g on amazon for 40 and bought it. Long term I will probably try all grain, but want to make the best extract I can before that. It will be a while before I can upgrade to ag.
