    warning: this looks yak

Although you do not need two SCOBY in one batch. Even just a piece of one will do it fine.

    warning: this looks yak

This is normal. Do not trash it. All of the black bits are just dead yeast and by product of the fermentation. The white is new scoby beginning to grow. Fill er up again, and let it ferment. It isn't always pretty, but its normal.

First time, is it normal or is the tea going bad?

No need to worry so much. Everything is normal. In the future I would suggest to filter the tea before fermenting it, but it really won't change the tea, as much as the look. No harm has been done. I'd let the tea take it's course. Welcome to the world of KT!

Bottling and storage of Kombucha (long term)

I second saramc - pasteurizing would destroy the beneficial bacteria.

First time, is it normal or is the tea going bad?

Those are normal. The coloration is the life cycle of the yeast. The clots are also just bacteria beginning to multiply. Good luck - Everything is normal!

    Kombucha - Safe to brew?

Jambafish - with temps near 70 you say 7 days? I have temps near 80, and I am doing 7 days. Most people can't drink my stuff though. I don't have PH strips, so I don't really know, I am just going by taste. How long are you doing yours? I taste almost no tea flavor, only bucha, if you know what...

    Kombucha - Safe to brew?

You may want to check out a Kombucha Mat to keep the brew warm, or stick it in your oven, with the oven light on. You will get much better results with a temp closer to 80.

    Infection?

This is NOT an infection. these air bubbles are made when the Kombucha starts to ferment. In fact, below those bubbles you should be able to begin to see strands of culture, almost as if they are hanging from the bubbles. Give it some more time, make sure you are between 75 and 82 degrees. In a...

First time brewing, what did I do wrong?

You actually do not want to use organic. The organic tea is more prone to mold contamination. Any regular tea will work fine.

I eneded up just making one quart. I then took my daughter and put it into a 2 gallon jar, with a spout, and the mother in a separate. Each with only one gallon of tea. Here I come Continuous Brewing System!
