    Southern Tier Pumking Clone??

Its about 20 drops per mil so if you dont have an accurate small syringe you can go off of drops--5 drops for .25 mils

    Southern Tier Pumking Clone??

Sorry im late! I used 2.67mL for 5 gallons. Results will vary due to different recipes, OG, FG, bitterness, etc...so I would start with 2mL and taste, then add .25mL steps until its right.

    Southern Tier Pumking Clone??

They have a natural version as well as an artificial version. I'm not sure how its made or how it differs from Capella's...all I know is that we use a lot of their other extracts (not the pumpkin pie) at our brewery (Terrapin) for one-off's and if it works for a microbrewery then why not a...

    Southern Tier Pumking Clone??

I get the diecetyl butter flavor, as well as graham cracker, and no off flavors if you don't over-do it. I haven't yet done the full batch, I'm waiting on it to carbonate in the keg right now. I wanted to add a little at a time after carbonation to make sure the aroma isn't overwhelming. When...

    Southern Tier Pumking Clone??

I think I've found the secret to cloning this beer: Pumpkin Pie Extract. I've tried several clone attempts with different variations on recipes in this forum, and the big thing I've noticed is that all of them produce good pumpkin spice ales, but none have the aroma or flavor of Pumking. I...

Can you Brew It recipe for Firestone Walker - Walker's Reserve

Brewed it a few weeks ago. Only differences were I used Magnum in place of EKG and oak-smoked wheat instead of the regular wheat. Used WLP 007 and was shocked when fermentation ended at 1.020. After carbonation the beer still tastes amazing. Oak flavor was a little more pronounced then expected...

WLP 007 Dry English Ale attenuation problem?

Ok so I gave this strain another shot in the Union Jack IPA clone. Mashed at 148F, grain bill had hardly any crystal or dextrin malt, and 8% of it was simple sugar to ensure good attenuation. This time the yeast kicked ass. 1.073 down to 1.011. I used the same process for the starter and...

    WLP545 and Pie Spice

Old thread, but how did it go? Im brewing a pumking clone this weekend and splitting the batch to ferment half with the wlp 545 strain. It sounds like it'll meld well but still a little concerned the pie spice and yeast spice may clash.

WLP 007 Dry English Ale attenuation problem?

I've had this same problem with 007 twice now, once in a brown ale and once in a porter. Both were mashed ~154-152 and had attenuations under 70%. That's with a 2L stater on a stir plate, and 02 bubbled for 1 minute in wort. Both fermented at 65F and let rise to 68 over the course of...

    El Dorado Hops?

I happened across 8 lbs of El Dorado pellets today...perks of working at a brewery...anyone else have any input (from experience) on flavor or aroma characteristics?

Heads up hop heads - Mosaic (HBC 369) at freshops!

My grain bill is a little crazy because I ended up using all of my left over crystal malts from previous batches instead of buying more. Just add up all the crystal and shoot for the same percentage instead of copying it exactly, unless you really want to. Also mine ended up darker than...

Heads up hop heads - Mosaic (HBC 369) at freshops!

I did a hop-bursted mosaic red rye a few weeks ago that turned out great. 15% rye, added only .5 oz mosaic at 90 min to aid boil reactions then did a total of 5 oz split between 20, 10, 5, and 0 minute additions to achieve ~70ibu. Dry hopped with 2 oz mosaic. I love this hop with rye. The...

    Midnight Wheat- add head retention?

Got an email from Matt Brynildson at Firestone Walker talking about their use of midnight wheat vs carafa: As for Wookey Jack, we chose the midnight wheat from Briess after chewing it next to the Weyermann carafa and other ultra high kilned materials selected for coloring up a beer like this...

    Briess's Midnight Wheat Malt

Matt Brynildson wrote me back and gave some excellent input: As for Wookey Jack, we chose the midnight wheat from Briess after chewing it next to the Weyermann carafa and other ultra high kilned materials selected for coloring up a beer like this. Although these products are advertised as...

    Briess's Midnight Wheat Malt

Has anyone tried blending the midnight wheat and carafa III together? I was researching some FSW wookey jack clone recipes and it seems that they use a 50/50 blend of midnight wheat and carafa III in their mash. Matt Brynildson is a f*cking genius so I'm sure he has a specific reason for...

Green Flash : Hop Head Recipe?

I agree that Jamil's recipe is pretty tasty as well. I do like to clone still, on occasion, but what I've found more appealing as of late is formulating recipes based on what I like about each of these great beers. For instance, I really like the Munich flavor you get in Jamil's Evil Twin, and...

    Briess's Midnight Wheat Malt

Sure thing. Here's the recipe I used last time. The grain bill is based off of a Sublimely Self-Righteous clone recipe I found. The hopping was a fun experiment with Australian hops. 16# 2-row 1# Crystal 60 1# Carafa III Mashed at 149F for 60 mins 1.080 OG and 1.016 FG using WLP 002 90...
