Nottingham Yeast Slow to Start at Low Temps?

Well, I'm about 40 hours in and now I'm seeing activity. So, the low temperature is really slowing down the start of fermentation.

Nottingham Yeast Slow to Start at Low Temps?

I brewed a Blonde Ale yesterday and since I had some Nottingham yeast available, I decided to use it instead of my usual liquid yeasts. According to their website, this yeast exhibits lager like qualities when fermented at low temperatures which would be ideal for a Blonde Ale. So, I decided to...

Omega Saisonstein's Monster OYL-500 yeast, anyone?

Okay, I'll try your schedule and start at 68F (1 day), 72F (1 day), and then 76F. If it worked for you, it'll work for me!

Omega Saisonstein's Monster OYL-500 yeast, anyone?

I'm ready to brew with this yeast on Saturday. Would you recommend holding temp at 72F for 3 days then go to 78F for the remainder?

    CO2 Regulator Washer Issues

Yes, it's a Taprite. I was thinking of just removing the O-ring and using the regular washer, but the O-ring diameter seemed a lot smaller than the regular washer. For now, I reversed it and I used Star San and soapy water and didn't see any leaks. I'll placing an order for the O-rings.

    CO2 Regulator Washer Issues

I just lost a full CO2 tank after swapping out my 15 lb steel tank with an Aluminum 5 lb tank. The regulator says to use no washer, since there is a built-in O-ring. Can I use the white CO2 washers for this or do I need to replace it with the proper O-ring? If so, should I remove the O-ring...

New Jersey Set of 3 SS Brew Kettles for 5 Gallon System

I have a set of 3 stainless steel brew kettles for sale. Two are 10 gallons and one is 8 gallons. The 8 gallon one has a false bottom and was used as a mash tun. The other two were used for HLT and boil kettle. I upgraded to a 10 gallon system so no longer have a need for these. All have SS...

    Need more bitterness....

I re-pitched with Nottingham yeast and the SG = 1.017. I guess is about as far as it can go.

    I did a step mash at 122F, 149F, and 155F.

    Need more bitterness....

I just did a hydrometer reading and the beer is at 1.020. This seems high to me. I have raised the temp over the last 1-1/2 weeks to 66F which is the max for this yeast (East Coast Yeast Kolsch #21). I hope it attenuates more.

    Need more bitterness....

I'll have to wait until fermentation is complete before tasting to get a good idea of the bitterness. I would assume it's too late to add hop tea at that point, correct?

    Need more bitterness....

According to Beersmith, the IBUs is 11.7. The range for this style is 18.0 to 24.0. What do you all think? More IBUs or leave as is?

    Need more bitterness....

I usually update the alpha before brew day, but this time I forgot. Yeah, I've never seen such a huge difference in alpha--almost 3X!

    Need more bitterness....

I brewed an Oktoberfest this weekend using Beersmith 3. It assumes a certain alpha content. When I went to add the hops, I realized the alpha content was vastly different than what the software assumed. 3.8% vs 5.0% and 1.8% vs 4.5%!!! I usually check this before brewing, but I messed up and...
