Beer in fermenter for 4 weeks!?

Agreed. 4 weeks should be no trouble at all. I've got an imperial pumpkin ale that's been sitting for 5-6 weeks and I'm not worried about it carbing at all.

Looking to make a good chili beer

Chilis and chocolate work EXTREMELY well together. Consider a chocolate chili all of some kind.

Half Drunken Rant about Noob Brewing!!!

Yeah. Get over it...Accidentally hit the send button...It's there now.

Half Drunken Rant about Noob Brewing!!!

Take this for what it's worth. I've been drinking nothing but my own Two Hearted clone that I've dubbed Two Faced in keeping with my Batman brewing name of Riddell Me This Brewing (Last name is Riddell) and my citrus wheat. Seriously, if you're panicking about something being wrong...RELAX...

What kind of infection is this, and what to do now?

Call it a lambic and drink it fast. :rockin:

    What NOT to do...

My guess? You had it too cold. #ducktoavoidflyingbrings

    Why do you Clone?

I clone out of pride. "Can I brew Bell's Two Hearted or Southern Tier's Pumking or Lagunitas Doppel Weizen just as good as them?" So far, my Two Hearted recipes is almost perfect. I clone to make my beer snob friends say "Damn, that's as good, if not, better than XXXXX." To know I...

What kind of infection is this, and what to do now?

Who? Me? Hell no. Unless it makes me vomit when I taste the samples, it's still beer.

    Returning samples to fermenter?

IMHO, it sounds like you're learning. You should be tasting the samples to see how the beer changes through all stages of the process to better understand it all. I typically end up with 2-3 bottles more than 2 cases when I bottle. I use those bottles as "test bottles" to examine how to...

What kind of infection is this, and what to do now?

Just for the record, I panicked last night when I saw that and went and searched the site for pics of infections until I was satisfied that I was fine.

What kind of infection is this, and what to do now?

I've got a doppel weizen that looks like that right now. You're fine. My fermenter temp went up a little past what I would like in the last couple of days and cause more CO2 to gas out causing the bubbles in mine. Mine tastes great. It does have the alcohol burn of a 8.5% hefeweizen but...

    Forgot to sanitize thief

I've never really spoken up on any of this before because I'm pretty new to this as well, but what I have found from seaching the site via google (put site:www.homebrewtalk.com in the search bar. It really does kick ass.) is that beer is not a delicate flower. It is a hearty beast and more...

    anyone ever try Soda Stream?

I own one of those. If you put anything in the water before you carb it, such as the concentrate or even the oils for adding like a lemony taste to the water, when you carb it it just sprays all over. If you were to put beer in the bottle, it'd be like heavily shaking a beer bottle and opening it.

    pumpkin beer.

And, after tasting the sample... Damn, I'm looking forward to October. ;)

    Deadringer IPA

I actually did 2 oz at 60 and 2 at 5 and added 1oz of Willamette DH. When I bottled it, it was OUTSTANDING!!!

    pumpkin beer.

I started with nearly 6 gallons and boiled down to 5. Imperial Pumpkin Ale 1lb Caramel 10L (Steeped) 9lbs - Gold LME 1oz Magnum (60 min) 1.5lbs light brown sugar (20 min) 60oz Pumpkin (5 min) 4 tsp Pumpkin pie spice (5 min) 1oz Saaz (Flameout) 2pkg US-05 Pretty simple but it...

    pumpkin beer.

I've got an imperial pumpkin ale (Pumking Clone) that I brewed over 2 weeks ago to be ready for mid October. Just took a gravity reading about an hour ago placing it at about 8.5%ABV. About to go taste that chilled sample now. I'm really excited about that brew.

    Deadringer IPA

I just bottled my modified version of NB's Deadringer last weekend. Right there with ya bud. Super excited. Luckily, I've got a couple of previous batches to tide me over until that one's ready to be sampled.

    Secondary Fermenter

I say, it's a hobby. If you want to find out what a secondary will do for your beer, do it. I bought a Better Bottle because I wanted one and wanted to see the differences between using a secondary and not using one. I dry hopped my first IPA in the secondary. I'm dry hopping my Two...

    Midwest Supply v. Northern Brewer

I live by both and have bought at both. Midwest has a better, wider selection of products. Midwest also seems to have a higher turnover or ingredients, which would lead me to believe they have fresher ingredients.
