Bizarre results pitching on a yeast cake

Don not understand this, so I hop some of you can share your wisdom. I pitched a kolsch on yeast 2575 a few weeks ago and it took off almost immediately. There were no more bubbles at 3 days. I brewed Ed worts October ale last weekend, and -- this was dumb. --did not check the kolsch's sg. It...

Pitching onto a yeast cake tips?

I racked a smaller beer on to a yeast cake on saturday, and it blew the lid off the fermenter twice within 5 hours of pitching, even with a small blowoff.

    Adding sweetness to fruit beer

I've got a raspberry ale ready to bottle, but it is very sour. Anyone have luck using lactose/splenda or otherwise?

When, for the first time, you drink your own clone, and it is better than the original.

    Spicy beer

I made one with serranos and ghost pepper-infused vodka that turned out nice. The good thing about adding infused vodka is that it can be added at bottling, which allows you to go easy on the pepper at first. You avoid overdoing it and still hedge against not going far enough.

Too much wort, but hit my OG?

One follow up. I have about 1.5 inch of head space. I put a sanitized tube in to the geo met directly, as that is what I assume a blowoff looks like. How much risk of a lid blow off do I have?

Too much wort, but hit my OG?

Did my second AG batch today, first full boil. It was Yooper's Cali common. I mashed with 3.5 gal, 2 gal mash out, and 3.5 gal sparge. It was to be a 7 gallon boil and a 5.5 batch. I did use an extra quarter pound of 60l. It can out at around 6.5 gallons but hit the OG of 1.050. I am...

    Earwax taste?

Bedroom stuff is off limits, y'all.

    Earwax taste?

My wife complains that some of the beers I brew have an "earwax" aftertaste that is present in other beers, but not to the same extent. I have brewed a PM IPA, a PM stout, and a PM pilsner. Anyone have any insight into this? My thought is that it could be the hops.

    IPA fermentation time

Is there any upside to letting an IPA sit in secondary for an extra week if the FG has been stable for a week? I do not want to lose the dry hop flavor. Thanks.
