    Anyone tried BRY-97 yeast yet?

This is less than 10 hours in the fermenter with a 48 hour 1L starter. This yeast is in Beast Mode.

    Anyone tried BRY-97 yeast yet?

This is a pic of what it did in a 1L starter in under 48 hours. Never had a yeast do this before.

    Anyone tried BRY-97 yeast yet?

So bought a packet of this at my local HBS this week only because the guys there seem to think it could be PacMan or something very close. They are pretty smart dudes and I trust their opinions. I did a bit of digging and there is nothing that confirms this is in fact PacMan but I can't think...

First batch, maybe infected - with pictures

Nice thanks. All my WLP 004 (Irish Ale) do this. Looks like some kind of growth in the bucket. But the beer always tastes good.

No didn't dryhop. Guessing it was the PacMan bringing out the hops. It has mellowed out after a few days in the keg. I actually like it. Not Chainbreaker but still good. I'll see how the next batch comes out with the citra and 1214.

    using krausen no starter

Awesome article about the Burton union. Had to comment so I can come back after work an get started on this thing.

Ok so kegged this thing last night and tasted today finally. Let me start by saying holy f'n grapefruit. I **** you not when I say this thing tastes like straight grapefruit juice. I mean I'm going to drink it, it's by no means undrinkable, but I also like grapefruit juice. So with that said let...

Haha. Forgot all about Trogdor. Had to think about it a min. What yeast is that? That us what my Irish ales look like.

Not sure how the sourness would play with the citrus in this one. I've never used the yeast but did some reading. The chainbreaker is a pretty clean tasting beer in my opinion. My first stab at this will be in the keg this weekend so I'll see how it turned out with the PacMan i pitched. Let me...

First batch, maybe infected - with pictures

Looks good Bro. Only way you're gonna get an infection is bad sanitation or LEAVING THE LID OFF YOUR BUCKET TO TAKE PICTURES. Not usually a good idea. But seriously that looks great and as stated above you did pitch a bit too high. I usually go by whatever the ambient temp is in my house or...

So update on this, not sure if it's because I used Pacman or what but this thing is done fermenting today (5 days). I noticed yesterday I didn't have any activity in the airlock so took a gravity reading of 1.010 today. Gave it a taste and wow it is bitter. I'm really hoping that will subside...

Need Suggestions on Chainbreaker White IPA clone (It's some crazy Wheat Pils IPA)

Ya I went a bit over :drunk: 1.061. I think I should have used the top up water in the pot before I boiled, I was just a bit short of my preboil for some reason and didn't think it would throw it off that bad. This should be interesting.

I brewed mine as well on Friday. I went a bit different than what I had earlier. It looked something like this. 8# Pils 2 Row 2.5# White Wheat 1# Flaked Wheat .25 oz Centennial First Wort .5 oz Bravo @ 60min .25 oz Centennial @ 60min .25 oz each Centennial and Cascade @ 15, 10, and 5 min. .5...

Fermentation can take 24 to 72 hrs to show visible signs.

It's really up to you. I used to rack to a secondary right at 7 days or when I had about a bubble a min in the airlock Now that I've got some brew stock piled I'll wait until most of the Krausen drops. Sometimes a week, sometimes more. It's good to wait until the yeast is done and cleaned up...

Not sure why he said no blow off tube. I use one on every beer I do at the beginning and sometimes I don't even need it. The only suggestion I can offer is to use a bucket to catch what ever is blowing out and fill it up with Star San or even water to cover the opening of the hose. That way it...

    How I Harvested PacMan Yeast

Ha. Nice analogy about hitting the beer bottle. I forgot all about that. Like u said I have no idea why it kicked off like that. I just found it odd that it happened literally as I kicked tue ferm bucket. Perhaps it could be a new method for fixing stuck fermentations. Thanks for the input.
