    Too Much Yeast

    I pitched half a packet of yeast more than the recipe called for. is this likely to cause serious off-flavors? should I leave it in the primary another week or something? I couldn't take an OG because I dropped my hydrometer and it shattered! color seems to be about right, though... any advice...

    Should I add water?

    Just made my first batch, followed the recipe exactly, or so I thought, but the carboy (five gallons) is only half-full! There should five gallons of liquid in there! So, should I add more water to the mix? Yeast's already in there and everything's set to go... Will have been five hours at 11:45...
