Just started a six gallon batch of this stuff after reading reviews of how great it is. It's hard to find cheap apple juice here, but all in all it came out to way less than a wine kit so I hope it turns out good enough to be some regular hooch. BTW I couldn't find the montrachet yeast...

nebben - did you run into problems just using a ceramic pot on the ceramic cook top or did you have problem with SS or aluminum? Has anyone had success with ceramic cooktops?

Thanks... I'm thinking of ordering a bit of stuff to get started anyway. Would doubling up on those kits (to cut down on added sugar) be okay... like two cans of whatever instead of using just one and then not adding sugar?

I just started brewing but have picked out a name. On my Irish side of the family the crest has a naked mermaid at the very top, so I decided on Topless Mermaid Brewing.

When you talk about leaving it in the primary for the duration is that a bucket with a lid and airlock? My primary doesn't have an airlock, just the lid that sits on top. Is this satisfactory or am I at risk of spoilage since there's no seal?
