    Kolsch go BOOM!

    Heh, I use a blowoff tube and the last time I brewed with Kolsch yeast the dang thing STILL flew out of the carboy! That yeast is serious stuff.

    I'm not even a hop head--I knew it wasn't going to taste good, but I thought it would at least be a fun adventure. Oh, man, that was unpleasant. I couldn't even make a straight-enough face to convince my man to try it! :p

    Word to the wise: do NOT eat a spoonful of hop-pellet mush from your strainer when transferring from kettle to fermenting vessel. Seriously. :eek:

    "Interesting" saison yeast behavior... any thoughts?

    Just wanted to cap off this thread by saying that we let the yeast finish out (and after that revived fermentation, it really cleared up), just tasted a bottle last night and it's a DEAD RINGER for Dupont. So have faith--and patience!

    Invert Sugar and Candy Sugar

    Here's my question: when a recipe calls for 5% white sugar, does it make a difference whether cane/beet sugar (sucrose) or corn sugar (dextrose/glucose) is used? Does cane sugar have any unique, desirable property at this low proportion? Cost is not a factor, I've got plenty of both... thanks!
