Why does belgium wit hate me??

Hey everyone Been brewing about 2 years now, 25+ batches under my belt and recently made the blessed switch from extract to partial mash (AG still a dream, but not too far away). I have only had 3 batches go bottle-bomb, foamy, disgusting bad on me within 2 weeks of carbonation completion. AND...

Fiat Lux, a lil wit, a lil IPA... anyone know a clone?

Hi everyone My friend just tried the new wit/IPA/fruit mix known as "Fiat Lux" from Brooklyn Brewery. Normally not a Brooklyn fan (in many ways) but he said this one was unique and frankly... awesome. 70% wit, 30% floral but light IPA with a lime finish was his description. Sounded awesome to...

stout after one week = gym sock aftertaste

Good points. Fermentation/bottling temp is 68-71 F w/ majority spent at 69 F. Minimal splashing during transfers. I have thought about the no-secondary advice and I may just start avoiding the secondary when not necessary. That way I can have more batches going at once anyway! I will...

stout after one week = gym sock aftertaste

Hello everyone I am a relatively new homebrewer... 5-6 batches. I just brewed a 'classic stout' from MWsupplies. Used late-extract w reduced bittering hops (~20% less) and primed w 3/4 cup DME (5 gal batch). Generally I follow the 1-2-3 rule w/ primary/secondary/bottling. Tried a stout after 9...
