    Saramc you can't use wine bottles they are not pressure rated they will go pop. Either beer bottles, champagne, or swing tops. Oh and you use corn sugar not corn syrup.

    adding sugar to fermenting wine

    I'm no expert but I think you will be fine. I have a apfelwein thats at 9% and .996 with Montrachet thats been sitting in the primary since January and it hasn't seemed to effect anything or have any sulpher tastes.

    Well gave it a good swirl to rouse them yeasties. Looks to be some more airlock activity. Would there be a better way to get that high of a percentage?

    Not 100% sure but i could have sworn I read on here some where that when using store bought apple juice and s-04 by racking it you can get it to stop fermentation after its been going for awhile :confused:

    Hmmm well that might be it, though once I had a federweisser ferment dry from 1.090 to 1.000 using plain table sugar and lavin D-47. That was pretty gross too lol. It fermented a lot faster then I thought it would have lol.
