Has anyone used dulce de leche in a beer?

search for "DOLCE" USDA SR21 (http://www.nal.usda.gov/fnic/foodcomp/search/) to get sugar composistion. 49% sugar of which 41.7% is sucrose, 1.7% Dextrose , 4.9% Lactose. It is also 7.3% Fat

Best bottled water for AG brewing

Just to let you know you CAN NOT remove chloramine with boiling and standard carbon filters. There is special catalyzed GAC filters that require low flow rate to break it down.

    Venturi Aeration/Oxygenation

How is this better than just using O2? If your pulling a vac on the bottle it should supply more gas... The other issue is it would be diluting the O2 concentration slowing down O2 absorbtion.

Boiloff: would this be a viable experiment?

I dont understand why boil off is expressed as a percentage of boil, instead of a mass flow rate. If the heat of vaporization doesnt change much the rate should be constant. Say you have a 1kW heater, it will vaporize about 0.5 g/s . 0.5g/s the percentage that represents depends on the...

    Coopers yeast

I will third the temperature tolerance. Only yeast that works good in Riverside, where I am lucky to get 80F with a ac full blast. On a side note I could have bought a freezer for how my power bill is during the summer.

DIY Marble Rolling Pin Grain Mill

Ah yes, adjustable hopper plate is what I was thinking. The second roller would have a better surface to crush against. I dunno the reason for 2rollers over 1, but my speculation is that having the non driving surface move with the kernal provides only crushing, instead of crushing and smearing.

DIY Marble Rolling Pin Grain Mill

Maybe it would be possible to make the mill adjustable by the piece of wood instead of the roller. Have you thought about adding a second roller?

How to avoid over/under shoot with HERMS in HLT?

Also one could use glass stones and steel balls to simulate heat transfer through the packed bed of the mash.

How to avoid over/under shoot with HERMS in HLT?

Well I was off about heat capacity, but the density is much higher for metals. Grain is about 1.54 kJ/kg/C. Stainless Steel 316 is about 0.5 kJ/Kg/C. You would need about 3 times the weight of grain in steel to have the equivalent thermal mass.

How to avoid over/under shoot with HERMS in HLT?

Could just use a smaller mass of metal in place of the grain. Basically if both the grain and metal start at the same temperature, the mass of grain times its heat capacity equals the mass of metal times its heat capacity. M2=M1 * C1/C2
