Can I use too much strike water?

I'm a partial brewer and usually just top up my pot with 5 gallons to improve heat retention and stabilize the temperature during the mash. That's 5 gallons for 4-5 lbs of grain. Is there a danger or downside in using well above the recommended 1-2 quarts of water per lb of grain?

    Secondary Headspace

I have 5 gallons of beer in the primary and I'm thinking about putting 1 gallon on oak for secondary in a small carboy I have. Will this leave too much headspace for the other 5 gallons in a 6 gallon secondary? What about a 5 gallon secondary? I'm about to buy a secondary (as we speak)...

    No Cider Yeast. Help!

I'm going to a cidery on Saturday to get some fresh cider pressed specifically for making hard cider. Here's the problem, my local homebrew shop is closed for the next few days, can't get cider yeast! I just racked a batch of porter off of White Labs WLP005 British Ale yeast that is sitting in a...

fermenting 4 gallons in a 6 gallon carboy?

I'm going to try my first all grain batch via deathbrewers stovetop all grain method. Because I want to brew a a weizenbock which calls for more grain than the 12 lbs that deatbrewer says will work, I have decided to scale the recipe back to 4 gallons. I only have a 6 gallon better bottle...
