How do you bring up your OG, or does it really matter? We had a brew with with an OG reading of 1.026 when it says we should be in the 1.045 - 1.051 range. Temp was 65F. What's the best way to hit the marks?

Just finished our second batch (Irish Stout). Used 5 gal carboy for primary with blow-off. Transfered to bucket for secondary (may have been first mistake) and used airlock.
Smelled great going during transfer to secondary. Now I'm getting a really strong cider smell from it...
