    Ferment in terracotta or any ancient pot

    Hi I am new to brewing and want to do the ancient way which is in terracotta pots. This however is not airtight and so am concerned about the ferment getting mold. How to prevent this and how did ancient beer ever get made without airlock equipment?? Thanks
