    White wine yeast for cider?

    Hi! I've decided to try Gervin GV5 white fruit wine yeast with my 2nd batch of cider. Mainly because it ferments down to 8°c! Is this a good idea, or should I stick with cider specific yeasts?

    Newbie cider maker!

    I've just made up a yeast starter with 10g of cider yeast in a apples juice and honey mix. It is very volatile even after 30 mins in fridge. Have I made up too large a starter for a demijohn size?
