    Would like to lower alcohol percentage.

    Hi again The Coopers kit I buy makes beer at about 5.25% alcohol. I'd prefer around 4%. The kit is one can of extract, one kg of dextrose, yeast and 23L of water. (Edit: oops, water added UP to 23L) Shall I add more water or less sugar and how much (more or less)... Ta :)

    Confession - I drank 4 day old beer

    Only in the bottle for four days...

    Lemon Zest

    Whoops - too much water...

    I think I put about half a gallon too much water in my batch. :eek: It's a Brewtec Lager (NZ Brand) kit and I used a can of liquid sugar. According to my OG (1.030) I'm going to end up with a pretty low alcohol beer... maybe 2.5% to 3%. I'm ok with that, I don't mind a low alcohol beer...

    Tasted my Hydrometer Samples - All OK

    My draught has only been in the Primary five days and the temperature had dropped to 66.2 the last two days which I thought might be a bit low for the yeast so I took a hydrometer sample to see if the bulk of fermenting had finished... it's reading 1010 (OG 1040) so I think it's going to be ok...

    Apfelwein - forgot to take OG

    I put on a brew of Apfelwein (thanks Edwort) about 13 hours ago but I forgot to take an OG... Should I take one now? Or not bother? Also I had to use plain old "General Purpose Wine Yeast" as I couldn't get the one in Edwort's recipe. Edit: Oh, and it's a half size (2.5 gallon) brew...

    When bottling/sanitising...

    Hope I'm posting in the right section... After sanitising, do you bottle your beer while the insides of the bottles are still wet? Otherwise you would have to air dry and I'm assuming they would become contaminated while waiting for them to dry... Sorry it's such a dumb question. :confused:
