    Beer pretty flat after 2 weeks.

    Beers been in bottles for 2 weeks now sitting at a constant 68 degrees. Just popped the second one open and they've both been slightly carbonated but nothing great. No head at all. I used 4 oz. of corn sugar. It was a 5 gallon batch.

    So I sampled before bottling and....

    It certainly tasted like a pale ale, but it had about two or three other flavors that hit you one right after the other. It even had a SALTY note. It'll be bottled for about 3 weeks at least. Will these complex flavors mellow into one smooth beer? I fermented in low to mid 60's.

    Why do airlocks explode?

    Aren't airlocks supposed to let off the pressure just like blowoff tubes? I realize that airlocks are smaller passages, but it should still be plenty to let off pressure no? Why don't they re-design airlocks to work properly?

    Fermentation vs Carbonation temps.

    Wondering if someone could explain why during primary fermentation it is important to keep the liquid at a very specific temperature in the 60's, and then during carbonation people just say keep it "warm" or around 60's and 70's. Why the greater leeway?
