There's apple flavored syrup the consistency of sugar free/light pancake syrup outside the fermentor. Nothing leaked out of the airlock and as far as I can tell the lid is on tight. What could cause this to turn to apple syrup? I'm too afraid to open the lid because I don't want apple vinegar.

I hope all goes well I dissolved 6 cups sugar into 4.5 gallons apple juice on my stove added a tablespoon of cinnamon and pitched a small mason jar of wyeast ale yeast that I recovered from an Irish red ale. Seems to be active since there was slight carbonation in the jar. Couple questions...

I just bottled my 5 gallons of irish red ale and thought to save the yeast. I boiled and cooled water and slushed it around with the cake and its giving off this nasty smell. should i toss instead of extracting?

Anyone know it? Northern brewer sells the kit for $45 not including the yeast. I figure someone who's bought the kit before would know the contents of specialty grains/lme/hops

I bought the $75 kit from Northern Brewer and it came with the Irish Red Ale Recipe kit. the kit says to transfer it to a glass carboy for 2 more weeks after 2 weeks in the primary bucket fermenter. Then it says if no glass carboy is available leave it in the plastic bucket for 1 extra week.
