    Maibock on 2124 fermentation question

    This Maibock has been fermenting for over 5 weeks. It went for several weeks at 52 F. Now it is at a higher temperature. Gravity has stalled at about 1.030. Anticipated FG was 1.019. Can I keg and lager this now and expect it to finish? Any suggestions?

    Is it normal for these contests to require that the beers be submitted two weeks in advance?

    Step Mash and Melanoidin Malt

    Does anyone here have experience using Melanoidin Malt in a Step Mash to simulate the effects of decoction? I have one recommendation of 6 oz. per 5 gal. batch. Are there any other malts that could help?
