    Hops Alpha Acid %

    I'm looking at various recipes that call for higher-than-I've-seen-available AA. For instance, one recipe calls for Spalt 7% AA, but I have only seen 2.6% AA or so.     RO or just softened water?

    I have the ability to either use RO or softened water in my basement. It seems to me that softened water would be a better option due to the fact that minerals are preserved, rather than having to add back in certain electrolytes/minerals with RO water.
