    OG way to high on Dunkelweizen

    Came out with 1.044 pre boil and 1.068 original and was only expecting 1.053. I should have cut the boil time down to 60min with that high of pre boil gravity but live and learn. Question is, cut with with sanitized water to drop OG or be happy with a 7% Dunkel? Opinions?

    Anyone mix polyclar in primary then diacetyl rest for 3 days then rack to secondary or should I wait till the end of the secondary before kegging?

    I was going to make my first IPA and was going to use a recipe on Beersmith but was wondering about the addition of honey and oak chips in the recipe. Is it best to add the honey during the boil or after? i'm not sure how much honey flavor i would like in an IPA and have read that after the boil...
