    So I have three gallons of cider, which is done and nicely aged. I was planning on kegging it up, but I've never Kegged a cider before. Any suggestions on how I'd go about doing so? Thanks!

    I put together a batch of this last night. 6 gallons. Used dry pils extract. Same ginger and honey. Man, smells good. Took a little taste before I pitched the yeast, and it had a wonderful ginger flavor and bite. I am looking forward to kegging it up! As I sit here watching my airlock bubble...

    Last minute Holiday ale

    I've never done a tea before. I am just about to bottle my Xmas ale that I made, but i did it all in a boil. The last 10 mins i added all the spices and such. Smelled damned good! Nice and black... Looks good.

    I've got an Imperial Chocolate Pepper Stout on the go... And I was going to bottle it. I don't know if I should add more yeast or not. It has been in primary for 3 weeks... and secondary for about a week. It clocked in at OG 1.10. It has gone down to 1.028 as a FG. Should i add more s-05? or...

    So who's brewing this weekend?

    A bit late... But I just got off work and I'm gonna brew. Doing an extract IPA with speciality grains. Calypso, el Dorado and citra hops. We'll see how it goes! Wish me luck.

    Plugged it in... And didn't seem like nearly enough bittering hops. Maybe I put it in wrong.

    First cider - Lalvin EC 1118

    I've used EC-1118 and this past summer, I have started using S-04 and I've got a batch on with S-05... I'll bottle it on Sunday. I made a beer with T-58.... A Belgian dry yeast. My Next 3 gallons will use that yeast. So far, S-04 is my fave. Good taste and such.
