    Was S-04 the right choice?

    They are being kind (not that I'm not) S-04 is a major under-perform-ing yeast. I would definitely pitch new yeast (US-05 or better) NOW. Either way, let us know how this comes out. That's the point, then really, right? :mug:

    The Munich I use is 10L. You'd need about 20 pounds to make any sort of browness. What kind are you using to significantly affect the color?

    Wyeast 3068 with almost 6 months

    I would just pitch it. A nice long lag time on this style isn't necessarily a bad idea. While this is happening, I'd get a line on some dry yeast and from this day forward, always have a pack of US-05 on hand at all times. I'd rather under pitch and have the possibility of it kicking off...

    Reverse Osmosis Water Recipe for an APA, Please

    I've been hearing this more and more lately; both from users here and from Gordon Strong in his new book. They all use phosphoric acid to lower the pH of their RO water to 5.5 and rely on the base malts to lower the mash the rest of the way to 5.1-5.3. I'm going to try this on my next brew.

    Home Made 10 Gal MT

    What's on the inside? I use another washer and O-ring, plus coupler. It only needs to seal from the inside out, so it doesn't matter about O-rings on the outside; a larger washer is more important. You could even go smaller washer that fits inside the depression, followed by a larger washer...
