    Nice to be seen! There are a lot of new members on this forum and a lot of old ones gone, but it still seems like everyone's having a good time. I no longer work at LM, but still stop by on their First Fridays every now and then to check in with them and see what's new. Man has it changed...

    That's good to hear. I would have been concerned if they had. I've seen metal completely dissolved by Katrina water. I lost a TON of equipment in the storm. Still lacking on kegs. I may take a few off your hands at the right price and meeting place. We'll see how it goes! :p

    I have these http://www.milkcratesdirect.com/ I like that they're new, clean, legal, and real solid. They fit 24 bottles of 16oz or 22oz, which is mostly all I bottle anymore. :mug:

    Trying to clone a local ESB - need advice

    I agree to cut down the aromatic and biscuit malts, but you could also change them to English malts that share the same character: Aromatic = Optic Biscuit = Pearl I'd go with 8oz of each. I think the Crystal looks fine. Good luck! :mug:

    Your temp is too low. Most Belgian styles will start 65° or above and ramp up a couple of degrees each day; some Trappist ales finishing as high as 80° to develop esters and also finish fermenting the high gravities. With a blonde, you probably aren't looking for all those wonderful Belgian...

    Yeah, sorry...was trolling a bit. :p Q1: The % difference won't matter. Q2: The longer boil is to combat DMS that Pilsner Malt produces. With that low of an amount, I wouldn't bother if it's going to cause more problems. Q3: You SHOULD be able to pull off about 70 minutes of boil...
