    black specs in my starter?

Black specks do not sound good to me. Was there anything in the original slurry that could have been colored like that? I would have to say that if you can't figure out what those are, I would dump it out. However, wiser heads may have different thoughts...... Gedvondur

Re-dosing w/ yeast before bottling big beer?

This poses a few questions. When aging a big beer, such as a Wee Heavy, what is the best place to age? I know these beers need a lot more time, but is that time best spent in the bottle or in a carboy? It would seem to me that if one could age it in the bottles, then this yeast issue...

    Help identifying keg

It's a Hoff-Stevens as Brewtopia indicated. They used to be pretty prevalent. Not many of those around any more. I used to tap Hoff-Stevens kegs of Old Style at I job I had in the late eighties.....messiest system ever. Gedvondur

    Brew stores in NYC???

A google search for "brew stores in the new york city area" revealed: http://www.nycbeer.org/homebrew/index.html I would imagine the lack of response was more due to impatience and a lack of new york city participating brewers on this message board than an actual lack of stores...

    Hazy Beer

We put it in the secondary when when transferring from the primary. So it sits on there for about two weeks. We haven't had any problems with bottle carbonation because of the gelatin but it has only been two batches. Has anybody else heard of that being an issue? Gedvondur

    Another One-Step Question

Its a percarbonate. It makes soda ash and hydrogen peroxide. In this thread https://www.homebrewtalk.com/showthread.php?t=23791 there is a discussion of sanitizers as well as a break out of the cost of sanitizers. One-Step is the most expensive of the three commonly used sanitizers...

Where do my tastes really lie?

You've hit the nail on the head. That's why Bud and Miller are as popular as they are and why just about everyone I know won't drink anything but. Especially beers that have a strong bitter aftertaste. Clearly I don't agree with that assessment, but when I have guys tell me that *Pabst* and...

    Caramel cream ale?

We just put Cheese's recipe in the primary last weekend. Its fermenting nicely, and we are looking forward to giving it a try. It smelled wonderful, and we picked up some very nice real vanilla extract from Penzey's. Gedvondur

    soda water

On top of that, "Club Soda" often has salt added and/or sodium bicarbonate, potassium bicarbonate, potassium sulfate, or disodium phosphate. Pure "seltzer water" is just carbonated water, but you have to read the label to be sure. But as the man says, no point in brewing with it...

    Another One-Step Question

One-Step is a no-rinse sanitizer. I would get all of the water you can out of them, obviously it would be better if they were dry. We have bottled with a few drops in the bottle, it hasn't been an issue. Gedvondur

    Counter Flow Cleaning Question

Excellent resource, CF. Thanks much for the link. We were considering what to do for a chiller, and that article is pretty much lays out the pros and cons of both systems. What isn't discussed are the chill plates like the Shirron. I don't fully grok how those work. They seem to be...

    Dishwasher with no Soap

We have used the dish washer as a sanitizer the last two times we bottled. It has been fine. We use One-Step in the soap dispenser, I don't know how much difference that really makes, but the thing gets plenty hot enough. We only sanitize in it, not clean. We also make sure to remove the...

    iodine vs Iodophor

Heh, that gave me a chuckle. Perhaps they are discussing the same thing on the methtalk.com message boards. I can't imagine what you would use iodine for in meth, but then again I don't understand why they use Draino either. Gedvondur

Is One Step by Logic a cleaner or sanitizer

Gross, MA_Brewer! Heh, I imagine that people with sensitive skin may see some effect sooner than others. I would think that if you have prolonged exposure to it, it may give you a rash or a low grade chemical burn. When I worked in food service, lo these many years ago, I used to use a...

Is One Step by Logic a cleaner or sanitizer

You do bring up some great points, Ed, especially when considering a septic system. All of these products drop in price significantly when you start buying in bulk. The ability to reuse the mixed product is also a significant factor when considering which sanitizer to use. Gedvondur

Is One Step by Logic a cleaner or sanitizer

To make 169 gallons of StarSan solution, it would cost approximately $12.61. However StarSan is not recommended for soft metals or plastics, and you should wear gloves when using it, it is acidic. Contact time is listed as 1 to 2 minutes, so for our purposes we will say two minutes. Here's a...
